I'm currently using SuperCopier2 with Windows Explorer, and when I make a copy of a file or folder, the name of the copy gets "Copy of" in front of its name (like in the very old days). However, making a copy using Explorer++ reverts to the newfangled "- Copy" naming for copies. Is there an option in Explorer++ to make copies of files and folders get the name "Copy of" instead of "- Copy"?
For example, if I make a copy of the file "foo.txt", I'd like the copy's name to be "Copy of foo.txt" and not "foo - Copy.txt".

From what I've understood, you'd like to have the name of the copied file to be configurable. From what I know, current release doesn't have such functionality.
I don't think it's very difficult to implement, but I'm not sure if this is top priority. Anyway, you could try to request this feature.
